Baked Salmon Fillet with Microgreens Salsa Verde
How to Make
Ingredients
1 whole salmon fillet, skin on & boneless
1 lemon, thinly sliced
1 garlic clove, thinly sliced
1 Tbsp capers, drained
Salt & pepper
To serve
Microgreens Salsa Verde
Handful fresh microgreens (e.g. Rambo Radish)
1 lemon, sliced
(Serves 4 - 6)
Method
Preheat oven to 180°C. Line a large baking tray with baking paper.
Place salmon skin side down on the baking tray.
Thinly slice lemon. Arrange lemon and capers over the salmon fillet and season with salt and pepper.
Bake for 15-20 minutes (depending on fillet size) until flesh is just cooked through.
Serve baked salmon, drizzled over salsa verde and garlish with microgreens and extra lemon slices.
